Food trends for 2015

Even if you’re not a foodie, the chances are you will have heard about the ultra-hipster cereal café that has sprung up in Brick Lane, London in 2014. So, with that in mind, we’ve taken a look at what food trends are going to be big in 2015.

1. The fermentation invasion

This food trend is one which has slowly grown during the past year, but 2015 is the year that fermented food is really going to explode. While the concept sounds unappetising, fermented vegetables are highly flavoursome and, unbelievably, really good for your digestion. Try some Korean kimchi (spicy, fermented cabbage) or Sauerkraut (not-spicy fermented cabbage).

2. Peru-se the menu

If you’ve been on a gap year, you may have already discovered the heavenly flavours of Peruvian cooking. If you haven’t, you’re in luck, as it’s this particular cuisine that’s going to go big in 2015. The most sought after dish will be ceviche – fresh fish cured in citrus juices. Watch out Wahaca.

3. Tasty technology

Not quite a food trend per se, in this ever evolving digital age, but restaurants and food brands are all looking to provide something extra for the consumer. Convenience and customisation are the name of the game: ideas like guests ordering food from the table and paying via smartphone is known as ‘front facing technology’ in the trade, and you can expect to see a lot more of it over the coming months.

4. The ugly truth

If you’re bored of kale, fear not because there’s a whole world of unattractive but delicious veg out there. Celeriac, celery root and parsnips are all being reimagined and plated up as unrecognisably beautiful dishes. Full of flavour but tricky to cook, expect chefs to be performing miracle makeovers using cured meats and hybrid honey. Honourable mention to the ugly veg cross breeds, in particular the adorably named Broccolini (regular crossed with Chinese broccoli).

5. Brinner

Us Brits do the all-day breakfast rather effortlessly, but in 2015 breakfast foods from around the world will be making their way to our tables at supper time.  No longer just for mornings, the breakfast burrito or chicken and waffles will be the order of the day… or indeed the night!
